Smoothie Week: Drink your greens!

On day three of smoothie week we’re drinking our greens!

Dark green leafy vegetables are touted as the most concentrated source of nutrition of any food. They are a rich source of minerals and vitamins, including vitamins K, C, E, and many of the B vitamins. They also provide a variety of phytonutrients including beta-carotene, lutein, and zeaxanthin, which protect our cells from damage.

Beyond being a picky eater, our allergy kid’s restricted diet has challenged us to provide nutritious well-balanced meals that she actually likes. Smoothies are a great way to ensure that your child is getting  some greenery into their diets – and they are delicious.

Below is our favorite green smoothie – beyond it tasting good, I love the color of this.  It’s cheerful, bright and beautiful – perfect for raising your spirits on a foggy morning like we’re having today…

Autumn’s Favorite Green Smoothie
1 1/2 cup water
1 cup frozen pineapple
1 cup frozen mango
1/4 of an avocado
2-3 kale leaves
2 teaspoons of agave nectar

Blend until smooth and enjoy!
