Vegan GF Blueberry Scones

Over the years the most popular recipe on our website has been our Vegan Blueberry Scones. Here is a gluten-free alternate version for my little boy.  Still delicious. Enjoy!

Ingredients
  • 2 cups Gluten Free Baking Mix King Arthur's or your favorite mix will do
  • 2 teaspoons cinnamon
  • 6 tablespoons coconut oil
  • 2/3 cup coconut milk + 2 tablespoons for topping (optional)
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice about 1/2 a lemon
  • 1/2 cup frozen blueberries
  • 1 tablespoon sugar optional for topping
Instructions
  1. Preheat oven to 425. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl combine flour and cinnamon. Cut in solid coconut oil with a fork until crumbly and evenly distributed.
  3. Combine the wet ingredients (milk - lemon juice) in a separate small bowl. Using a fork mix the wet ingredients into the dry slowly until just combined. The dough will be sticky and soft. Then carefully fold in the blueberries.
  4. Turn out onto a floured surface. Shape the dough into a circle about 3/4 inch deep. Cut into 8 equal pieces and move to the baking sheet.
  5. Brush the slices with the coconut milk and sprinkle with sugar. Bake for about 20 minutes or until lightly browned.
