Sausage and Peppers

Sweet Italian sausage, sweet peppers and onions are a classic combination. I’m pretty sure Tony Soprano would not approve of me serving them over zucchini noodles, but this is a new family favorite of ours that’s easy and delicious any day of the week – and sadly, Tony is no longer with us. So here it is…

Ingredients
  • 1 teaspoon olive oil
  • 6 links sweet Italian sausage or spicy to your liking
  • 2 red bell peppers sliced
  • 1 red onion sliced
  • 1/3 cup chicken broth
  • 6 zucchini spiralized into noodles
  • 2 Tablespoons tomato paste
  • salt and pepper
Instructions
  1. Add your oil to a warm pan and sear the sausages on all sides for about 5 minutes. Remove from pan and let cool. Slice the sausages into bite-sized pieces and don't add to the pan yet.
  2. Add the vegetables to the pan and a pinch of salt an pepper. Cook the vegetables until soft and starting to brown on the edges.
  3. Return the sausage to the pan, add the chicken stock and tomato paste. Cook until the sausage is completely cooked through and the sauce is starting to thicken.
  4. Turn off the heat and toss in the zucchini noodles until well incorporated into the sauce. You might want to cut up the noodles a little bit before adding, but my kids like them long, so I leave long.
