For Thanksgiving our family spent a rare day cooking, playing and just being together. When it came to dessert, we couldn’t agree on what to make so we made little pocket pies filled with what we each wanted. Served with some vegan whip creme or ice cream, they were really tasty and everyone was happy.
To make the pies you can purchase a pie crust or find a simple mix like this one. For filling, we made an apple and a pear filling. We used about one apple or pear per pie. You don’t need this little apple pie mold you can just form a circle or a rectangle, fill it in half and seal the edges with a fork.
This recipe is very simple.
apples peeled and chopped
lemon juice 1/2 lemon
coconut oil or vegan butter
pumpkin pie spice
flour gluten free works great
Peel, core and chop the apples. Toss the fruit immediately with lemon juice to prevent browning.
Heat all the ingredients except flour on the stove top until its all melted and combined.
When the fruit begins to soften add a teaspoon of flour to thicken and continue stirring. Once desired thickness is achieved remove from heat and allow to cool.
This is great used in these little pocket pies, little pies of your own or just spooned over a little ice cream.
