Benny’s Gluten free Granola

Summer is here!  For a recent road trip I wanted to make the kids a snack that was healthy and easy.  I haven’t made granola in years. Not sure why I never thought of it for the kids before. I throw together homemade trail mix all the time with all their favorite nibbles, so this was a natural next step and we all loved it.

I made this version for my little guy who loves everything in the pantry and is always hungry, so feel free to edit or add your favorites to the list. I keep little dixie cups by a water jug so the kids can get some water any time they want, but they also use the cups to get a little scoop of this when they get hungry. It keeps the kids happy and busy munching away, especially when they just can’t wait to eat.  It’s a great way to start the summer. Enjoy!

Ingredients
  • 4 cups Gluten-free rolled oats
  • 1/4 cup sesame seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup coconut
  • 1/4 cup flax meal
  • 2 teaspoons cinnamon
  • 2 tablespoons maple syrup
  • 1/4 cup coconut oil warmed to liquid state
  • 1/4 cup honey
  • 1/2 cup dried cranberries
  • 1/2 cup mini chocolate chips
Instructions
  1. Preheat oven to 325°.
  2. Combine all the ingredients except the cranberries and chocolate in a large bowl.
  3. Spread onto a large baking tray and bake for about 25 minutes, stir every 5 minutes or so. The granola will be browned and crispy. Try not to overcook - it will continue to crisp up as it cools.
  4. After removing from the oven, wait for it to cool and add half the chocolate while it's still a bit warm and stir it gently. The chocolate will melt and create little clusters as it cools.
  5. Then wait for it to completely cool before adding the rest of the chocolate and cranberries. Store in air-tight containers.
