This is a very simple recipe. Just 2 ingredients! Just bananas and oats and whatever else you want to jazz them up. We added just coconut this time but chocolate chips, raisins or dried cranberries would be really good.
You can use frozen bananas for this recipe. When bananas get too ripe or risk not being eaten, we peel them and collect them in a bag in the freezer. Just thaw before using.
bananas mashed (about 1 and 1/2 cups)
In a food processor add the bananas and oats and pulse until combined into a stiff batter. Add the other ingredients and pulse a couple times.
A food processor is optional. You can mash it up by hand and keep it easy.
Spoon onto a parchment lined baking tray, flatten with a fork for more even cooking and bake for 15 - 20 minutes.
