Lunchbox of the Week: Day at the Art Festival

Working a booth at an Art and Wine Festival can make for really long tiring days. To make the day go faster, its fun to have a lunchbox with treats from home, made with love.

A little trick for the salad is using frozen peas – just throw them on and they will thaw on their own and be cold and yummy by lunchtime.

Today’s box contains:

Spinach salad: baby spinach, shaved carrots, sunflower seeds, peas (frozen).
Sliced carrots
Strawberry vinaigrette: tbsp. olive oil, tsp. rice vinegar, tsp. lime, teaspoon strawberry jam, hemp seeds
SB&J: Soy nut butter & strawberry jam on gluten free bread
Teriyaki tofu sticks: Marinate tofu slices, then bake and cut into sticks
Fresh picked organic strawberries
