This week we’ve been taking a little break from work for a few days, but now we’re back. Our lunchbox of the week is a little late, but here none the less.
My husband is a fine art photographer, so we attend a lot of art events and exhibits. This week was a reception for a new exhibit my husband is in celebrating birds. Among other things, Autumn is an aspiring photographer so she was excited to attend the reception. These events are always impossible to rely on for safe food, so here’s what we packed to get us through the evening.
- polenta with a funny face
- strawberries and blueberries
- homemade pizza toast
- salad with fresh greens, carrots and flowers from the garden
The polenta is made with organic quick cooking polenta with a little fake butter. Pizza toast is just plain pizza dough stretched thin with a little garlic, olive oil and salt cooked on a stone until really crisp.
It was a fun night and this was the perfect little summer meal to get us through the party.
