Happy Valentines Day!
For a special treat, we made Brooklyn Brownie Cupcakes from the fabulous cookbook Vegan Cupcakes Take Over the World: 75 Dairy-Free Recipes for Cupcakes that Rule. These came out so amazing – gooey and chocolatey and delicious. Instead of frosting we melted some our favorite allergy friendly chocolate chips from Enjoy Life and added a little coconut butter to thin it out and a few sprinkles.
Valentines day is always a bit stressful for us with all the the candy and allergy-laden snacks in the classroom. Our plan of action is for Autumn to bring her own food for the party and wait until she gets home to open her valentine cards. These cupcakes were perfect for her today – she just may make the other kids jealous, they are so delicious.
The kids love these, but in my opinion, they are amazing paired with a glass of red wine – which I will enjoy later tonight!
