Gluten-free Steel-cut Granola

My 4 year-old is in pre-school. His teachers have been great about his specialized diet.  Each week they email me what he’ll be having and I try duplicate it or get close enough so he won’t feel left out.  This week the kids were having granola. I got a late start so when I finally looked in the pantry, all I had was steel-cut oats.  Little did I know, it makes amazing granola – perhaps my favorite batch ever..?  It’s sweet and crunchy and chewy and fruity.  Perfect over yogurt, ice cream (or non-dairy frozen dessert), or just as a snack.  This also makes a great gift. I sent my little man with an extra big jar so he could share with this lovely teachers and I also dropped some off down the street to my favorite neighbors.

Trade the fruit and seeds for whatever you have on hand.

Steel-cut Granola

1 cup steel cut oats (gluten free)

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1/4 cup sesame seeds

1/4 cup hemp hearts

1/4 cup maple syrup

2 Tablespoons of honey

1/4 cup coconut oil

1/2 teaspoon vanilla

1 teaspoon pumpkin spice

1/4 cup coconut

1/4 cup dried cranberries

1/4 cup crushed banana chips

Preheat the oven to 300 degrees.  Line a cookie sheet with parchment paper.  Dump all the ingredients except the coconut and fruit onto the parchment paper and stir with a spoon.  Place in the oven for 5 minutes to get the honey soft and the coconut oil melted. Take out of the oven and stir everything together then spread evenly over the tray. Place back in the oven and cook for 40 minutes stirring every 10 minutes. Remove from the oven, add the coconut and fruits and stir to combine. Back in the oven for a final 10 minutes.  Let cool completely. It will become crunchy and oh so tasty! Store in an airtight container.
