Cupcakes and Whoopie Pies!

My little man turned three this week so I’ve been baking treats for his piratey birthday celebrations (yes I said celebrations – home and day care).  I decided to try out some Divvies recipes and they did not disappoint.

For our home mini celebration, I made Divvie’s chocolate cupcakes.  They were really beautiful cupcakes, moist and soft and chocolatey. To cut the sugar, I just made a thin glaze icing with a few sprinkles. I made these ahead of time. They froze beautifully and were just as moist and pretty later in the week as the day I made them.

1107-whoopieI also made Divvies’ recipe for Whoopie Pies – they adapted the recipe from Gourmet and posted it to their facebook page.

I followed the recipe except I doubled the chocolate and made the cakes a bit smaller – making 22 total cakes.  They turned out really good – my husband did a taste test and he loved them.  The cookies were really light and airy.  The filling was good, but I will probably play with it next time to try to get it a little fluffier and lighter. The only downside was that I had a lot of frosting filling left over. It’s a bit of a peave of mine when frosting recipes don’t match the batch.  Divvies didn’t recommend freezing it, but I froze it anyway because I hate throwing food away and didn’t know what to do with it. I will definitely cut the frosting filling recipe in half next time unless I’m planning on making a double batch.

Overall, both of these recipes were pretty tasty. I would recommend both recipes, but to attain hero status give them whoopie pies!
