Chocolate Chip Macaroons

For those of you that can indulge in coconut, these macaroons are a delicious treat – chocolatey with a hint of crunchy salt makes them extra special. This is the recipe to bust out the fancy salt you received as a gift and don’t know what to do with it – we used black salt from Hawaii. Everyone loves these – they can be served at a fancy dinner, in lunches, or your child’s tea party and best of all they are easy to make with no baking – they’re raw!

Chocolate Chip Macaroons

1 cup shredded unsweetened coconut
1 tablespoon + 1 teaspoon cacao powder or cocoa powder
2 tablespoons mini chocolate chips
3 tablespoons coconut butter – softened
2 tablespoons agave nectar
1/2 teaspoon coarse salt like black sea salt

Mix all the ingredients in a bowl with a fork until completely mixed.  Use a rounded spoon such as a small ice cream scoop or a melon baller for even smaller macaroons.  Pack the mixture firmly into the shape to form your macaroons then refrigerate for at least 2 hours. This makes about 12, 1 tablespoon macaroons.
