Benny’s Gluten-free Granola
Summer is here! For a recent road trip I wanted to make the kids a snack that was healthy and easy. I haven’t made granola in years. Not sure why I never thought of it for the kids before. I throw together homemade trail mix all the time with all their favorite nibbles, so this was a natural next step and we all loved it.
I made this version for my little guy who loves everything in the pantry and is always hungry, so feel free to edit or add your favorites to the list. A little scoop of this keeps him happy and busy munching away, especially when he just can’t wait to eat. It’s a great way to start the summer. Enjoy!
Benny’s Gluten free Granola
4 cups Gluten-free rolled oats
1/4 cup sesame seeds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup coconut
1/4 cup flax meal
2 teaspoons cinnamon
2 tablespoons maple syrup
1/4 cup coconut oil (warmed to liquid state)
1/4 cup honey
1/2 cup dried cranberries
1/2 cup mini chocolate chips
Preheat oven to 325. Combine all the ingredients except the cranberries and chocolate in a large bowl. Spread onto a large baking tray and bake for about 25 minutes, stir every 5 minutes or so. The granola will be browned and crispy. Try not to overcook – it will continue to crisp up as it cools. Wait for it to cool and add half the chocolate while it’s still a bit warm and stir it gently. This will create little clusters. Then wait for it to completely cool before adding the rest of the chocolate and cranberries. Store in air-tight containers.
