It’s been a while since we posted a lunchbox. This one was for my 3 year old son. Lately he’s been having some unexplained motor tics, it’s been scary and heartbreaking for us, so after a lot of research we have decided to try him him on a gluten free, dairy free diet for a while. It’s been challenging at preschool to try to find substitutions for all the meals they eat, but after only one week we’ve seen some positive changes so we’re hopeful. This one was my version of meatloaf and mash potatoes. I made turkey meatballs, edamame, and a few black berries. I’ll write more about elimination diets and how to best implement them in the coming weeks.
The turkey meatballs are made with ground turkey breast, shredded apple, shredded carrots, a little minced garlic, salt, pepper, fennel, and a couple pinches of finely chopped parsley. I scoop them out with the little ice cream scooper, roll them into tighter balls, and put them on parchment to bake at 350 for about 12 minutes or until just done. This is an easy timesaver to do over the weekend, then you can freeze them or just refrigerate them for later in the week. One and one-half pound of turkey will fill an entire cookie sheet with meatballs, and give you peace of mind that you have an easy meal ready to go.
