Vegan Bird Nest Macaroons
Look what the Easter Bunny has been up to.
These cute little macaroons were created using one of my macaroon recipes formed into a bird’s nest with little jelly beans on top. Honestly, I prefer the macaroons without the jelly beans, but this is a fun variation.
These are vegan, tree nut, peanut, egg, dairy, soy and gluten free. They do contain coconut and some sugar. I didn’t have much coconut on hand so I just made a little batch – this recipe makes 8 little bird nests.
Bird Nest Macaroons
3 tablespoons sugar
2 tablespoons vanilla
1 teaspoon flax meal
1 teaspoon chia seeds
1 teaspoon agave nectar
1 pinch of salt
1/2 cup of coconut
2 tablespoons of gluten free flour
2 tablespoons of vegan chocolate chips
About 24 jellybeans or little egg-like candy
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Combine all the ingredients. Using a small scoop, form little mounds of equal size (a heaping tablespoon) on the baking sheet. Using your finger, form a little hole in each mound to make a nest. Bake for about 10 minutes or until they start to brown. When you pull them out of the oven they will lay down a bit, just take a fork and push the edges back up. They will firm up as they cool.
While the cookies are cooling, melt the chocolate gently in a double boiler or the microwave. When the cookies are cooled, line the nests with chocolate and add your little eggs.
If you just want to make straight macaroons with this recipe, form the macaroons into round balls, bake, then dip into the chocolate and let cool.
